Old Hickory est une marque d'Ontario Knife Company.
Ontario Knive Company est fondée en 1889 à Naples (Etat de New York) et sa production est établie dans une manufacture à Franklinville.
Très active dans le domaine des couteaux militaires, OKC produisait aussi des couteaux d'extérieur destinés au marché civil ainsi que la marque Old Hickory.
En août 2023, OKC est achetée par Blue Ridge Knives, l'usine de Franklinville est fermée et la production relocalisée en Virginie.
La marque Old Hickory est créée en 1924 et est spécialisée dans la fabrication de couteaux de cuisine.
La particularité de ces couteaux Hickory est qu'ils sont fabriqué avec de l'acier à forte teneur en carbone et des manches en bois dur(noyer) fixés à l'aide de rivet en laiton.
De construction rustique, ces couteaux sont réputés pour leur solidité.

Entièrement fabriqué aux Etats-Unis, rustique tant pas son aspect que par ses composants (acier au carbone, laiton, noyer), son design rappelle les couteaux de camp de type Kephart. La seule touche de modernité est la découpe dans la lame qui sert d'onglier.
D'un aspect franchement utilitaire et pas de tout agressif, il est parfaitement ajusté et muni d'un puissant ressort de rétention. Il faut de la force pour l'ouvrir comme pour le fermer, limitant ainsi les risques d'accident.
Il n'y a aucune trace d'oxydation (ce serait malheureux en sortie de boîte) et la lame rentre bien dans le manche, aucun risque de se blesser avec la pointe une fois le couteau fermé.
Par contre, il y a quelques arêtes qui peuvent faire mal au niveau du talon de la lame et des platines en laiton lorsque le couteau est fermé.

Le seul défaut que je lui trouve pour l'instant est cette découpe dans la lame qui s'encrasse très vite et un peu inutilement lors de la préparation d'aliments.

With the Franklinville factory having closed in 2023, will production resume in the USA, be moved to Asia, or end altogether? I don't have any information on that for now.
Fully made in the United States, rustic both in appearance and materials (carbon steel, brass, walnut), its design is reminiscent of Kephart-style camp knives.
The only touch of modernity is the cutout in the blade that serves as a nail nick.
Clearly utilitarian in appearance and not aggressive at all, it is perfectly fitted and equipped with a strong retention spring.
You need some force to open and close it, which helps prevent accidents.
There’s no sign of rust (which would be unfortunate straight out of the box), and the blade fits snugly into the handle, so there’s no risk of cutting yourself with the tip once the knife is closed.
On the other hand, there are a few edges that can hurt at the heel of the blade and on the brass liners when the knife is closed.
